should i get the kit with the 18-55mm lens in it, or should i buy the body, and then spend a little extra money on a seperate lens? also, if you have any other suggestions for digital SLRs or websites to shop at, that would be amazing.

I recently purchased the Nikon D40x. I also have a Canon Rebel 35mm SLR. I chose the Nikon because it seemed to be a better value and I liked the feel. I purchased it at Ritz Camera (aka Wolf Camera). They have a deal for $799. You get the camera body, 18-55mm lens, 55-200mm lens and a Nikon camera bag. They also throw in a bunch of software, free prints, etc. At the time, there were offering a free HP or Canon printer (via rebates). As for the camera, I am pleased with the photos I have taken and plan to experiment a bit with it in the near future. Hope this helps.

I am a Canon Photographer so I be pushing towards the Canon DSLRs like the XTi, it’s in the same class as the Nikon D40x but, it is your choice. Check out the prices and your options at http://www.bhphotovideo.com

Go for it. You will not regret it. At this time the D40x gives you the most "bang for the buck"
The "kit" lens is a good one and will get you started.
If you want to get a little more versatile lens, get the 18-200mm VR or you can wait and buy the 55-200mm later.
